1.     Aged:
Asiago: Italian Style, made with 100% fresh sheep milk. Aged 4-8 months
Tomme: French Style, made with 100% sheep milk. Aged 4-8 months
Manchego: Spanish Style, made with 100% sheep milk. Aged 4-12 months
Montaña: Alpine style blended milk (20% sheep & 80% cow); Reminiscent of Gruyère . Aged 3-6 months
Baby Swiss: Young baby style swiss, made with 100% jersey cow milk. Aged 2-4 months.
Sharp Cheddar: English style, sharp, white-light yellow, made with 100% jersey cow milk. Aged either bandaged or waxed for 8-18 months.

Andean Ash: Verde Oveja does a unique presentation of a bloomy rind cheese that we call Andean Ash. Made with 100% sheep milk. Aged 3-6 weeks. Edible rind, creamy center – perfection for a cheese board!

Cheddar cheese curds: Fresh cheddar curds packaged for a perfect high protein snack! 100% cow milk.
Cottage: European full fat, large curd, creamy cottage cheese. Made with 100% fresh Jersey cow milk.
Ricotta: Whey Ricotta is creamy white, fluffy, and slightly sweet, sometimes tangy, curds made secondary to one of our 100% sheep milk cheese (Manchego, Tomme, Asiago).
Fresh spreadable: Verde Oveja’s Fresh Spreadable Cheese is made with 100% sheep milk and comes in plain as well a variety of flavors (Garlic & Peppercorn, Red Chili, Herbs, Rosemary).
Cow and Sheep Greek yogurt. All natural, thick, creamy, and deliciously tangy!
4.     Brined:
Feta: Traditional Greek Feta made with 100% sheep milk and aged 3-4 months in an 8% brine solution.
Halloumi: Cyprus style cheese using 100% sheep’s milk and aged it for a minimum of 2 weeks; Unique cheese designed for pan searing for a hearty meal.
