* Fresh crab meat over rye-flour blini, caviar, crème fraîche and truffle oil

* Carrot terrine, dehydrated olives, beet-jus glazed uvilla in tomato-water dressing

* Cream of pumpkin with puff-pastry croutons

* Braised pork belly with sherry-wine cranberry glaze

* Grilled sea bream filet over zucchini gruyere gratin, saffron infused oil and cauliflower purée

* Mojito granita palate clenser

* Caramelized figs over home-made fromage blanc, pistachio, candied fruit and passion fruit tuile
