• 1 pack Bacon Bits chopped
• Kosher salt
• 3 large egg yolks
• 1 large whole egg
• 1 cup freshly grated Parmesan cheese, plus more for serving
• Freshly ground black pepper, to taste
• ¼ cup chopped fresh parsley
• Brown the bacon bits. Remove and drain on paper towels.
• Whisk the egg yolks, egg, cheeses, ¼ teaspoon salt and black pepper in a large mixing bowl.
• Cook your favorite pasta, drain (save 1 cup of the cooking water).
• Whisk ½ cup of the hot water into the egg yolk mixture,
• Immediately dump the hot pasta into the bowl, then toss it all together quickly and thoroughly. Add more water if the sauce seems dry. Then toss in the bacon bits and parsley. Serve with additional grated cheese on the side.
