ITA Cocina Diversa: A restaurant built on the decision to come home to Cuenca

Some of the most interesting restaurants begin with a question rather than a business plan.

For Paula, who is from Cuenca, and Wilmo, originally from Loja, that question appeared during a visit back to Ecuador in 2023. At the time they were living abroad, but returning home raised a possibility they could not ignore.

Should they continue building their lives outside Ecuador, or was it time to come home and build the restaurant they had always imagined?

Opening a restaurant anywhere carries risk. Opening one built around a different culinary idea carries even more uncertainty. They wondered whether Cuenca was ready for something new.

In August of that year they decided to find out.

That decision became ITA Cocina Diversa.

A New Home Near San SebastiΓ‘n
The restaurant recently moved into a new location near San SebastiΓ‘n Park, one of Cuenca’s most vibrant and culturally active neighborhoods. The area has become a gathering place for art, cafΓ©s, and creative energy, making it a natural setting for a restaurant that values originality.

Arriving at ITA feels slightly different from entering a typical restaurant. Guests ring a bell to be welcomed inside, which immediately creates the sense that you are stepping into a private and carefully curated space.

That small detail adds something important in today’s environment. It creates both a sense of security and a feeling that the dining experience inside is meant to be relaxed and unhurried.

Once seated, the dining room offers another pleasant surprise. The windows open toward the hills that surround Cuenca, providing a beautiful view that quietly reminds guests how closely the city still sits beside nature.

A Kitchen Inspired by Ecuador’s Ingredients
Ecuador is one of the most ingredient-rich countries in Latin America. Markets are filled with fresh produce, seafood, herbs, and regional specialties that many chefs around the world would envy.

For Paula and Wilmo, that abundance was part of the inspiration behind the restaurant.

Their idea was not to move away from Ecuadorian products but to explore what those ingredients might become when viewed through a broader culinary lens. Their travels had introduced them to different techniques and new ways of thinking about how people gather and share food.

ITA was created to bring those influences together at the table.

The phrase β€œcocina diversa” reflects that approach. The kitchen welcomes multiple culinary influences while remaining grounded in Ecuador’s remarkable ingredients.

Every Dish Earns Its Place
When I asked Paula which dish on the menu might best represent the restaurant, her answer was refreshingly honest.

They do not have a favorite.

Every dish on the menu exists because it was carefully developed and refined until it earned its place. Nothing appears casually. Each plate represents time spent experimenting, adjusting, and improving before it was ready to serve.

That philosophy becomes clear once the food arrives.

During my visit, the dishes were balanced and thoughtful without becoming complicated. The flavors worked naturally together, and the presentation was elegant without feeling forced.

Most importantly, the meal felt intentional. Nothing appeared on the plate simply for decoration. Every element contributed to the overall experience.

That kind of attention is often what separates a good restaurant from one people remember.

A Restaurant Worth Discovering
Cuenca already has many excellent restaurants, but ITA Cocina Diversa stands out because it approaches Ecuador’s ingredients from a slightly different perspective.

Instead of repeating familiar dishes exactly as they have always been prepared, the kitchen explores what else those ingredients might become.

The result is food that feels both familiar and unexpected at the same time.

Restaurants that attempt this balance do not always succeed. When it works, however, the experience can be memorable.

Based on my visit, ITA Cocina Diversa is clearly moving in that direction.

For anyone who enjoys discovering restaurants that combine creativity with respect for local ingredients, this is a place worth adding to the list.

And it all began with two people deciding that coming home was worth the risk.
