Walking into Full Criollo Restaurant, I was greeted with a warm smile from Jenne, the wife of the proud Venezuelan owner
and chef. Javier Gil. A migrant from Merida, Venezuela, he has poured his heart into this restaurant for six years, and his passion shines through. Despite the bustling environment, Jenne made me feel instantly at home, setting the tone for a welcoming and friendly experience. Full Criollo is more than just a restaurant — it’s Javier’s dream come to life, supported by his family and his late father.
Full Criollo offers a cozy atmosphere that makes you feel like you’re in Javier’s own kitchen. The dining space is comfortable, with a friendly vibe that invites guests to relax and enjoy their meals. The walls are adorned with touches of Venezuelan culture, creating an inviting space where you can savor every bite. It’s the kind of place where you feel like you could linger all afternoon, soaking up the warmth and hospitality.
The menu at Full Criollo is a true celebration of Venezuelan cuisine. From traditional arepas to hearty plates of pabellón criollo, each dish is crafted with love and authenticity. Javier’s versatility in the kitchen shines through in every bite, with daily specials and a diverse menu that caters to a variety of tastes. The freshly made arepas are a must-try, and the pabellón criollo is packed with rich flavors that transport you straight to Venezuela.
Full Criollo also offers a special Executive Lunch, or Almuerzo Ejecutivo, perfect for those looking for a satisfying and affordable midday meal. This set lunch includes a comforting bowl of soup, a main course featuring a protein such as beef, chicken, or fish, accompanied by rice, fried plantains, or beans, followed by a small dessert and a refreshing glass of fresh juice. The Executive Lunch is an authentic Venezuelan experience, bringing classic dishes like asado negro and pollo guisado to the table, all at a reasonable price.
For my meal, I chose the pabellón criollo—a classic Venezuelan dish featuring shredded beef, black beans, rice, and fried plantains. The beef was tender, the plantains perfectly caramelized, and the flavors blended beautifully. It was comfort food at its finest, reminding me of home-cooked meals filled with love. I also had to try an arepa, stuffed generously with shredded chicken and cheese. Each bite was a reminder of the authenticity and care Javier puts into his cooking.
The staff at Full Criollo were attentive, friendly, and made sure I had everything I needed. My waitress was knowledgeable about the menu, providing excellent recommendations that made my experience even better. Javier himself checked in on guests, ensuring everyone felt welcomed and well-fed. It’s clear that the sense of community is at the heart of Full Criollo, with a dedicated team that works seamlessly to create a memorable experience.
When it was time to settle the bill, the process was straight forward and the pricing was more than fair for the quality of food and service. As I was getting ready to leave, Javier personally thanked me for coming in — a small gesture that felt genuine and heartfelt. Full Criollo is not just about great food; it’s about the warmth, the hospitality, and the feeling of being part of something special.
Dining at Full Criollo was an uplifting and memorable experience. Javier’s dedication to his craft, his family, and the community shines through in every aspect of the restaurant. From the flavorful dishes to the personal attention given to each guest, Full Criollo offers an authentic slice of Venezuela in Cuenca.
